Irish Skip Boe’s Famous Greek Shrimp

Ingredients:

1 large onion

Garlic Cloves (1 to 2)

1 tablespoon oregano
-
Herb enhanced crumbled feta cheese

1 large tomato
-
1 pound shrimp peeled and de-veined

Olive oil

Procedure:
|
Add a couple of tablespoons of olive oil to a large skillet. Mince garlic and sauté. Cut onion into ¼ -inch thick slices and line pan. Dice any remaining onion and fill in around slices. Cook for 5-minutes. Slice tomato into ¼-inch thick slices and lay on top of onion. Dice any remaining tomato and fill in around slices. Cook for another 5-minutes. Place shrimp on top of tomatoes, cover skillet and cook until shrimp are opaque. Uncover and sprinkle feta and oregano over the top. Serve once feta has melted slightly. Dish should be served as 1-layer. May be served by itself or over a bed of rice.
