Shrimp and Grits to Die For - Shrimp

Ingredients:

2 pound small shrimp peeled and de-veined

3 cups of water

1/2 teaspoon salt

3 tablespoons bacon grease
-
2 tablespoons finely chopped vidalia onion
-
3 tablespoons flour
-
1/4 teaspoon black pepper

Procedure:
|
Bring water and salt to boil in a large pot and add shrimp. Cook for 2 minutes or as soon as shrimp start to float. Drain saving the liquid. Heat bacon grease and saute onion. Add flour and pepper until all fat is absorbed and mixture turns brown. Gradually add the shrimp liquid that was saved before, stirring the mixture until smooth. As the gravy starts to thicken add shrimp. Simmer, covered for 4 to 5 minutes over low heat. Serve over grits with crisp bacon.
