Shrimp Fried Rice - Shrimp

Ingredients:

Pound of peeled shrimp

2 tsp. Cornstarch

1/2 tsp. Salt

5 tbsp. Oil

3 eggs, beaten

4 cups rice cooked

2 tbsp. Soy sauce

Procedure:
|
Toss shrimp with cornstarch and salt. Stir-fry in 1 tbsp. Oil in wok or large skillet for about 30 seconds or until pink. Remove to dish. Heat 2 tbsp oil in wok. Add eggs and cook until set, stirring constantly. Remove to bowl. Add remaining oil, rice and soy sauce. Stir- fry until heated. Add eggs and shrimp and stir-fry for one minute. Remove and serve.
