Ingredients:
  • ¾ of a cup of cooked Little Neck clams
  • ½ of a bell pepper, minced
  • ½ of a Vidalia onion, minced
  • 2 tablespoons of fresh parsley, chopped fine
  • 1 tablespoon of oregano
  • ½ cup of margarine melted
  • Hot Sauce to taste
  • ¾ cup crushed saltine crackers
  • ¼ cup fresh Parmesan cheese
  • 1 slice of American cheese
  • Paprika to taste
Procedure: Chop the clams fine. Combine the above ingredients except for the American Cheese and Paprika and mix well. Add the ingredients to a greased 1 quart baking dish. Cover the mixture with the American cheese and sprinkle with the paprika to taste. Bake at 350 degrees for 30 minutes. Serve with wheat crackers. Chop the clams fine.
