Ingredients:
  • 1 ½ pounds Sheepshead fillets
  • 1 8 ounce bottle of salsa, chunky or mild
  • ½ pound Velveeta Cheese
  • ½ cup crumbled nachos
  • 1/8 cup diced green onions
Procedure: Sauté green onions in a skillet. Line a microwave safe casserole dish with fillets, cover fillets with salsa and green onions. Cover dish and microwave on high for 5 to 6 minutes, rotating fillets midway through cooking time. Cover with thin slices of Velveeta and cook for an additional minute to melt cheese. Top with nachos and serve.
