Mexican Style Sheepshead - Fish

Ingredients:

1 ½ pounds Sheepshead fillets

1 8 ounce bottle of salsa, chunky or mild

½ pound Velveeta Cheese
-
½ cup crumbled nachos
-
1/8 cup diced green onions
|
|
Procedure:
|
Sauté green onions in a skillet. Line a microwave safe casserole dish with fillets, cover fillets with salsa and green onions. Cover dish and microwave on high for 5 to 6 minutes, rotating fillets midway through cooking time. Cover with thin slices of Velveeta and cook for an additional minute to melt cheese. Top with nachos and serve.
