Bacon Wrapped Oyster - Oysters n/a  (Hits: 400)
Cut bacon strips in thirds. Wrap a bacon around each oyster and place a toothpick through to hold it in place. In a medium skillet, heat oil, and add garlic. Cook wrapped oysters in oil until bacon is crisp. Remove from pan and drain on a paper towel.

Heat butter and oil in medium sauce pan over low heat. Add all the ingredients except oysters and mix well. Remove sauce from heat. Place oysters in a small casserole dish and pour sauce over them. Preheat oven to 450 degrees and bake for 15 minutes until topping is brown.

Crush crackers with rolling pin into very fine crumbs between waxed paper. Mix with paprika and oregano and set aside. Beat eggs with water. Dip oysters into eggs and roll in crumbs. Lay on flat surface at least 30 minutes to set crust. Fry in moderately hot fat, 375 degrees, until crusty, about 4 to 5 minutes. Drain on paper towels. Garnish with lemon wedges and dill pickles. Serve with tartar sauce.
Monte's Oyster Stew - Oysters n/a  (Hits: 411)
Cut fat-back in strips about 1/4"; wide. Wash and let drain. Cook in cast iron frying pan until real crispy and golden brown. Remove fat-back from drippings and put aside. Then cook diced onions in drippings. Set aside until ready to put in stew. Add seasoning to the half-and-half such as pepper, seafood seasoning, (I use old Savannah Seasoning which I find at Bilo) Morton Nature's Season Seasoning Blend, hot sauce to taste. Add butter, the sauteed onions and the drippings that you cooked the onions in to the heated half-and-half. Do not let boil I put the raw oysters with juice from oysters in stainless steel pot and let slowly heat. Do not let boil! Stir well. I put the half-and-half in another steel pot. Let this get hot, but do not let boil! Stir good. Once the half-and-half with the seasonings gets hot, add the oyster juice to this. Cut burner down to warm and cover pot. Be sure to keep stirring until you get ready to serve to keep from sticking to the bottom of the pot and just before you get ready to serve add the cooked fat back to the stew.
Oysters Rockefeller - Oysters n/a  (Hits: 388)
Sauté celery, onions, and parsley in olive oil for 5 minutes. Combine sautéed vegetables, spinach, and sherry into a blender and puree. Place 18 baking shells in a baking pan and add the vegetable mixture to the shells using a spoon. Add the oysters. Sprinkle with cracker crumbs and drizzle with butter or margarine. Bake at 425 degrees for 10 to 12 minutes.
Scalloped Oysters - Oysters n/a  (Hits: 370)
Mix crumbs together. In buttered casserole dish put a layer of crumbs, oysters, half of the butter, salt, and red pepper. Add another layer of crumbs, and the rest of the butter dotted over the top. Cover with coffee cream. Let stand for one hour before baking at 450-degrees for 15 minutes. Brown top under broiler.
Walnut-Crusted Trout in Brown Butter - Oysters n/a  (Hits: 341)
This provides a true "roasting" method for an oyster appetizer. In a bowl combine all the ingredients except the oysters, and mix well. Adjust the seasoning to taste and transfer the mixture to a large piece of plastic wrap. Roll up the flavored butter to form a tight log and freeze. Prepare grill for medium-hot cooking. Remove the cold log of butter from the freezer and unwrap. Slice thin rounds of butter log, about 11/2 teaspoons each, and place 1 round on top of each oyster. Place the oysters on the heated grill, close the grill cover, and cook, covered, until the butter is melted and bubbly, and the oysters are no longer opaque and have curled around the edges, about 4 minutes. Serve immediately.
