Preheat the broiler. Arrange the fillets on a baking sheet or in a baking dish and sprinkle them with pepper, then brush with olive oil. Spread the mustard evenly over the fish. Single layer filets on a greased broiler pan. Brush the filets with lemon juice. Combine other ingredients in a small mixing bowl. If possible, skin the fillets. Sprinkle both sides with salt and pepper. Place fish in a single layer in a greased baking dish and arrange tomato slices over the fish. Sprinkle with more salt and pepper, and onion. In a saucepan, blend the flour with the butter, add milk gradually and cook until thick and smooth, stirring constantly. Remove saucepan from heat and stir in the wine and basil. Pour sauce over fish fillets in baking dish and bake in a moderate oven for 30 minutes. Do not overcook. Sprinkle with parsley and serve.
Flounder in cream sauce - Fish n/a  (Hits: 477)
Cook fillets in 1oz. butter. Add wine and cook 15 mins. Remove fish and place on a heated dish. Reserve wine. Melt 1 oz. butter, add flour and gradually add stock. Bring to the boil. Simmer for 5 mins., then add cream and remaining butter. Mix until smooth and add salt and pepper to taste. Carefully pour over fish and sprinkle with chives. Serve immediately.
