Baked Red Snapper - Fish 9   (Votes: 1)  (Hits: 449)
Heat oven to 350ºF. Spray 8-inch square baking dish with nonstick vegetable cooking spray. Arrange snapper skin-down in dish. Set aside. Combine shallots, garlic and oil in 10-inch nonstick skillet. Cook over medium for 3 to 4 minutes, or until shallots are tender-crisp, stirring frequently. Remove from heat. Stir in juice, parsley, paprika, cumin and pepper. Pour shallot mixture over snapper. Arrange tomato slices evenly over snapper. Cover dish with foil. Bake for 20 to 25 minutes, or until fish is firm and opaque and just begins to flake.
Blackened Red Snapper - Fish n/a  (Hits: 362)
Mix all ingredients and sprinkle one side of fish with ½ of mixture. Melt butter in a cast iron skillet and place skillet over med high heat until hot. Place filets seasoned side down and cook 4 minutes. Sprinkle other ½ mixture on filets and turn cooking the other side about 3 or 4 minutes or until filets are blackened and flake with a fork. Remove and serve.
Blackened Snapper - Fish n/a  (Hits: 381)
Combine onion powder, garlic powder, dry mustard, ground thyme, pepper, & chile. Sprinkle one side of each fillet with half of this mixture. Coat a large cast iron skillet lightly with olive oil. and place over medium high heat until hot. Add fillets, seasoned side down, & cook for 4 minutes. Sprinkle fillets with remaining onion powder mixture. Turn fillets over & cook 3 minutes or until fillets are blackened & flakey.
Greek Red Snapper - Fish n/a  (Hits: 397)
Place fish in a greased baking dish. Spread onions and oregano over filets. Sprinkle with lemon juice. Mix parsley and tomatoes together and spread over filets. Sprinkle with cheese. Cook at 350 for 20 to 25 minutes or until browned.
Grilled Red Snapper - Fish n/a  (Hits: 450)
Combine all ingredients except fish and parsley to make marinade; allow red Snapper Fillets to marinate in sauce (30-60 minutes) in refrigerator. Remove fish from marinade and place on a lightly oiled barbecue grill and cook (10 minutes, per inch of thickness of fish), or until the flesh is opaque, brushing frequently with Spicy Citrus Sauce. Serve hot, right from the barbecue.

1. Preheat grill. 2. Clean and gut fish, remove top and bottom fins, scale and remove gills. 3. Brush with 1 tbsp. olive oil and place on grill and cook until done, 20 to 25 minutes, turning once. 4. Meanwhile, toss herbs and into a mixing bowl. 5. Add 2 tbsp. olive oil, lemon zest and juice and sale and pepper to taste. Toss and set aside. 6. When fish is done, garnish with herb salad and serve with oil and lemon juice.
Red Snapper Delight - Fish n/a  (Hits: 392)
Preheat oven to 400 degrees. Place fillets in shallow baking dish. Saut onion in a little bit of water. Drain and add cracker crumbs, parsley and pepper. Spread over fillets. In a saucepan, add enough milk to the mushroom juice to make 1 1/2 cups. Blend in flour. Add wine. Pour over fillets and bake at 400 degrees for 25 minutes. Sprinkle on cheese and paprika and bake 10 more minutes.
Red Snapper Perfection - Fish n/a  (Hits: 411)
Place fish filets in a single layer in a well greased baking dish. Put nutmeg to the side and combine all of the other ingredients together. Pour the mixture over the filets and let marinate for 45 minutes. Preheat oven to 325. Sprinkle nutmeg over filets and bake for 30-35 minutes or until fish flakes easily with a fork. Remove and serve.
Grilled Red Snapper With Mustard n/a  (Hits: 258)
Combine mustard, vinegar and red pepper in small bowl; mix well. Coat fish thoroughly with mustard mixture. Place fish on grid. Grill, covered, over medium-high heat 8 minutes, turning halfway through grilling time, or until fish flakes easily when tested with fork.
