Fish: Cobia ( 3 recipes )

Grilled Cobia - Fish n/a  (Hits: 223)
Cut fillets into serving size pieces and place in a bowl. Combine olive oil and lemon juice and mix. Pour mixture over Cobia steaks and let marinate for 10 to 15 minutes. Remove steaks from marinade and grill for approximately 7 minutes. Turn frequently basting constantly with marinade.
Lemon Herb Cobia on the Grill - Fish n/a  (Hits: 193)
Marinate Cobia fillets with the skin on for 2 to 4 hours in Lemon Herb Marinade. Remove fish from marinade and place the fillet skin down on the grill. (Note: I prefer to use the upper rack of the grill to keep the fish from being burned from grill flare-ups.) Baste fillet with fresh lemon juice and butter, and sprinkle on black pepper. Half way through the cooking time flip the fillet over. Remove the skin using a spatula and baste the fillet again with fresh lemon juice and butter. Sprinkle parmesan cheese and black pepper over the fillet. The fish is done when the meat is still firm, but can be pulled apart easily with a fork.
Grilled Cobia n/a  (Hits: 173)
Cut fillets into serving size pieces, and place in a bowl.   Combine olive oil and lemon juice.  Add all remaining spices to oil and lemon juice, and mix. Pour mixture over fish steaks. Marinate for 5 minutes. Remove from marinade and barbecue for about 8 minutes over coals (Keep checking, do not overcook!) Turn as necessary, basting several times with marinade. Serve hot off the grill.
