Andy's Crab Omlette
n/a (Hits: 330) Sauté the onion and bell pepper in 2 tablespoons butter in a skillet over medium heat until tender-crisp; drain. Cool slightly. Combine the onion mixture with the crabmeat in a bowl and mix gently. Whisk the egg yolks in a bowl until blended. Stir in the ginger. Add the crabmeat mixture and mix gently. Beat the egg whites in a mixer bowl until stiff. Fold 1/3 of the egg whites into the crab mixture. Stir in the remaining egg whites gently. Heat remaining butter in an oven-proof skillet over medium heat. Add the crabmeat mixture, tilting the skillet to distribute evenly. Cook for 5 minutes or until set around the edge. Broil for 3 to 5 minutes or just until the omelet begins to brown. Let stand for 5 minutes. Cut into wedges.

Melt butter; add flour, salt, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add 1 cup milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
Remove from heat.
Spoon sauce into crabmeat mixture, mixing well.
Add toast crumbs, reserving 1/4 cup; mix well.
Stir in mayonnaise.
Fill 12 crab shells or 6 oz custard cups with crabmeat mixture; sprinkle reserved toast crumbs on top.
Bake at 400 degrees for 20 minutes.

Crab Broccoli Casserole - Crab
n/a (Hits: 342) Cook broccoli until almost tender and arrange in the bottom of greased 1qt casserole. Sprinkle with grated cheese. Melt ¼ C of butter and saute the onion. Add flour, curry powder and salt. Stir in milk gradually. Cook until thickened. Stir in Lemon juice and add crab. Pour over broccoli and cheese in casserole. Mix 2T of melted butter with bread crumbs and sprinkle over top. Bake at 350 for 30 min.

Crab Cakes - Crab
n/a (Hits: 403) In a bowl, mix bread crumbs, eggs, mayonnaise and seasonings. Add crab meat and mix gently by thoroughly. If mixture is too dry, add a little more mayonnaise. Shape into 6 cakes. Cook cakes in a frying pan in just enough fat to prevent sticking until they are browned (about 5 minutes on each side).

Crab Cakes Baltimore Style - Crab
n/a (Hits: 410) In a large bowl dampen bread, do not soak. Combine with egg, mayonnaise, Worcestershire, baking powder and seasonings. Mix well. Stir in crab meat and shape into 4 patties. Coat patties with cracker crumbs. Saute in heavy skillet with margarine until brown.

Crab Casserole - Crab
n/a (Hits: 352) Crab should be steamed, drained, broken into chunks, and the cartilage removed. In a skillet cook rice, onion and garlic in oil over medium-low heat, stirring occasionally until rice is golden brown. Remove from the heat. Add water, un-drained tomatoes, bouillon granules, salt and a few dashes of hot pepper sauce. Cover and simmer about 15 minutes or till most of the liquid is absorbed. Stir in the peas and cook for 5 minutes longer. Stir in the crab and sherry; heat through.
