Had some grilled wahoo and dolphin as well as the shrimp,fresh corn and red peppers left over...and rather than try to warm them up did this with it instead...


first fried some bacon(low sodium)///not only for the "crusty grease" but for blts for donnie...



removed the bacon and all but a few tablesppons of grease....and to the pan added some cut potatoes, chopped celery,bell pepper,scallions,and a little minced garlic....some cajun seasoning,smoked paprika, a bay leaf, and some fresh sweet basil.....a twist or two of fresh ground pepper...and cooked until the taters were begining to get tender....then I chopped some fresh tomatoes and added these in as well...moved all to a larger pot...crumbled the fish...added in the shrimp and a little of the corn mixture...an a large can of tomato puree , a small can of tomato sauce with about alarge can also of water.
















simmered on low...smell was mmmmm-mmmm
made some rice and homemade sweet "spoon" cornbread (self rising corn meal with a little course ground as well, a egg, tablesppon of bacon grease and some chopped scallions and corn, little sugar....dash of milk)>>>+)..






figured out where the first few I fried went











have to say...was some of the best Ive ever made..esp after i hit it with a healthy dose of hot sauce..neighbor got half for their dinner...and seemed very pleased with it


so next time you have left over grilled fish....

It was really good! And a great way to use leftover fish....
