I just tried my first home canned skipjack and it was amazing. Easily better than any high end store bought tuna. I like to eat it without much on it and there is no need to cut it with mayo. All you need are some mason jars and a big pressure cooker.

I like the blind toss over the head while unhooking in mid air and sliding right down to the fish hold.
