Recipe of the Week

Mahi Tacos

Ingredients:
1 cup all-purpose flour
2 tbsp. cornstarch
1 tsp. baking powder
1/2 tsp. salt
1 egg
1 cup beer
 1/2 cup plain yogurt
1/2 cup mayonnaise
1 lime, juiced
1 jalapeno pepper, minced
1 tsp. minced capers
1/4 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. dried dill weed
1 tsp. ground cayenne pepper
 1 quart oil for frying
1 pound Mahi fillets, cut into 2 to 3 ounce portions
1 (12 ounce) package corn tortillas
1/2 medium head cabbage, finely shredded

Directions:
1. To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry about a few lumps).
2. To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
3. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
4. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.

Offshore Etiquette
     Offshore fishing in Charleston really heats up in April and May each year. People who do not fish offshore are amazed when I tell them how crowded it can get when you are fishing offshore early in the season. They cannot understand how you can run 50-70 miles out into a wide open ocean and run into a crowd of boats. Once you explain that everyone is looking for structure or favorable water temperatures and many times these conditions can come together in rather small areas, they understand. This is particularly true with tuna fishing. Not only do tuna school up in tight areas, but they are also a fish with incredible vision. More than one angler has complained of the frustration of seeing tuna jumping everywhere and not being able to catch them.

DNR Plans Public Auction May 21 In West Columbia
     The S.C. Department of Natural Resources will conduct a public auction of surplus property and equipment on Wednesday, May 21 in West Columbia.
The auction of items such as vehicles, boats, outboard motors, all-terrain vehicles and other equipment deemed as surplus will be held at the S.C. Department of Natural Resources (DNR) Styx Receiving Compound at 2760 Fish Hatchery Road in West Columbia. The auction will begin at 10 a.m. Wednesday, May 21 and continue until all items are sold. Registration for the auction is May 21 from 8:30 a.m. - 10 a.m. All items may be viewed on preview day from 9 a.m. to 3:30 p.m. Tuesday, May 20 at the Styx compound.
A list of the items scheduled for auction is posted on Surplus Property at: www.dnr.sc.gov/admin/procure/surplus.html . Some items may be added or removed according to DNR's needs.

Marine Resources Open House To Feature Variety Of Programs
     The Marine Resources Center Open House will be held on Saturday, May 3rd from 9 a.m. - 4 p.m. and will provide the public with a free opportunity to learn about all of the ongoing work by numerous state and federal agencies that are located at Ft. Johnson.
     The S.C. Department of Natural Resources (DNR) is hosting the Open House event, which will feature exhibits, displays, hands-on activities and seminars that showcase the efforts of DNR to protect, conserve and manage the state's woods and waters, especially marine resources. The DNR will be joined by its partners on the Ft. Johnson campus: Hollings Marine Laboratory, NOAA, College of Charleston, and the Medical University of South Carolina.
As a spotlight of projects showcased during the Open House, the Hollings Marine Laboratory will offer insight into many of their programs throughout the day, including information about Marine Genomics, Marine Biospecimen Bank, and Nuclear Magnetic Resonance, to name a few.
     The Genomics project reflects a cooperative effort between faculty at the Medical University of South Carolina, DNR, NOAA, the National Institute of Standards and Technology, the College of Charleston and Clemson University. The program has targeted white shrimp, oysters and bottlenose dolphin for intensive investigation of genetic responses to environmental challenges and disease. The Marine Environmental Specimen Bank is a research and monitoring program that assists researchers with answering questions regarding trends in environmental contaminants. The Nuclear Magnetic Resonance program uses high-powered instruments to further research in medicine and environmental areas that require a detailed knowledge of what is 'out there.'
     For additional information about the event and a glimpse of DNR program opportunities, such as a seminar schedule and exhibit list, visit: www.dnr.sc.gov/marine/openhouse.html . Admission is free and parking and transportation will be provided from James Island Charter High School.
     In addition to the Open House, Fort Johnson will also host the 2008 Harry Hampton Marine Conservation Banquet and Auction, to be held the night before, from 6-9 p.m. on Friday, May 2. Attendees will be able to preview some of the Open House displays, exhibits and activities, as they enjoy heavy hors d'oeuvres, beverages and live and silent auctions.

The Final Word

     The fishing this past week was really good. The weather allowed plenty of boats to make it offshore and plenty of fish were caught. Blackfin tuna were caught in good numbers with several fish caught in the 30# range. There were not as many yellowfin tuna caught, but there were some nice ones brought to the docks. The dolphin fishing is heating up and becoming more consistent. There were some really big wahoo caught with a few fish in the 80# and up range. There were some blue marlin caught and also some sailfish. Added to the excitement were come Mako sharks that are common in our waters, especially in the spring. Bottom fishing is good with some really nice grouper and snapper being taken. Inshore the trout and redfish are hitting artificial and live bait. Live mudminnows are working very well for flounder. The sheepshead fishing is very good around the artificial reefs and the jetties. The weather for this weekend is looking really good. Hopefully everyone will get the chance to get out and have some fun.
