Recipe of the Week

Shrimp Jambalaya

Ingredients:
2 lbs. shrimp peeled and de-veined
1 clove garlic finely chopped
2 cups raw rice
1/4 cup parsley finely chopped
3 cups water
1/2 cup onion tops finely chopped
3 tbs. oil
1- 14 oz. can stewed tomatoes
1/2 bell pepper
1- 6 oz. can tomato sauce
2 tbs. flour
1/8 tsp. cayenne pepper
1 1/2 cups onions finely chopped
1/4 tsp salt
1 cup celery finely chopped
Directions:
Heat oil and flour, cooking slowly and stirring constantly until golden brown. Add onions, celery, bell pepper and garlic. Cook slowly until transparent, stirring often, add stewed tomatoes and tomato sauce and let cook until oil rises to the top. Stir in raw rice, raw shrimp and 3 cups water. Cook covered over very low heat until rice is tender about 20 or 30 minutes. Add more oil or water if mixture appears to be too dry. At the very end when cooked stir in parsley and onion tops. Makes 4 to 5 servings

Technology
     I often tell my friends and family that I believe I may have been born in the wrong century. I often dream about how much more simple life must have been in many ways back during the early to mid-eighteen hundreds. I picture myself as a hunter and fisherman living off the land, caring my favorite side arm daily, and perhaps even riding a horse to town every so often to get a few bare essentials. Those that know me well; know not to expect a quick response on e-mail, never send me a text message, and yes the word is out the Pickett house hold just got cable TV and high speed intranet a few months ago. None of my friends can believe that I am a partner in an internet company, and I quickly inform those that do not know me that I do not handle any of the computer technology on the site; I just help with the content from time to time.

Dolphin Research Program
Marine Anglers,
     The 2009 dolphin season has been reported as fairly good to great for most anglers in the South Atlantic Bight. Anglers reported that the early run of dolphin was comprised of a very high percentage of 15 to 20 pound fish. Some apologized for not being able to find fish small enough to tag. (Yeah, right!) The only thing that kept it from being a fantastic spring dolphin season was the high winds in May, which kept boats off the South Atlantic Bight waters for most of the month.
     The high winds of May had a major impact on dolphin tagging. The number of fish reported tagged so far in May is the lowest since the first year of this study. Thank goodness, fishermen are making up for the low May number during June.
     In spite of the low number of fish tagged, tag recovery reports have soared past the number reported during all of 2008. This newsletter focuses on two of the more recent tag recovery reports that demonstrate two of the major theories on dolphin movements that have evolved from this study.

DNR Courtesy Boating Inspections Set During July 4 Weekend
     In an effort to keep state waterways safe during the upcoming July 4th holiday weekend, the S.C. Department of Natural Resources Law Enforcement Division will again be conducting courtesy safety inspections at some public boat landings.
     The Independence Day holiday weekend is one of the busiest weekends of the year on state waters.
     S.C. Department of Natural Resources (DNR) boating safety and enforcement officers will perform a quick, but thorough, inspection for items such as required safety equipment and proper boat and motor registration. Those who are not in compliance with safety regulations or registration requirements will not be ticketed during the complimentary inspections. Instead, they will be given an opportunity to correct the problem before they launch their boat. DNR officers will also be available to answer questions and give boaters tips on how to stay safe on the water.
     To report boating violations such as reckless operation or an intoxicated boat operator, call the DNR toll-free, 24-hour hotline at 1-800-922-5431. For a copy of South Carolina's boating regulations, to find out about local boating safety courses or to obtain a free float plan form contact the DNR Boating Safety Office at 1-800-277-4301 or visit the DNR Web site at www.dnr.sc.gov/boating

The Final Word

     With high pressure dominating the weather conditions weather has been great to get on some fish over the last week. Tides have been running right at 8-feet every evening this week making for some great tailing tides to get on the Reds. Live bait, weedless spoons, and weedless jerk baits are perfect for these fish in the grass. The early morning and late afternoon trout bite remains good on top water. Zara Spooks and Mirrolure Top Dogs have been hot. There is also plenty of bait in the creeks currently both finger mullet and bait shrimp abound, so cork fishing with live bait for the trout can be used to fill in the rest of your day. We fished the surf on Monday night, but the tide was running so hard down the beach we could not keep our baits from washing. We did have a couple strikes from some toothy fish, but no luck on the Reds. The Spadefish action has been good on the artificial reefs. We fished last Friday at the Charleston Nearshore Reef, found plenty of jelly balls at the end of the jetties; but were unable to find any fish on the reef. Water was really muddy, and we are not sure if that had anything to do with that lack of fish or not? There were some really nice fish caught there the prior weekend. The Sheepshead action has been good at the rocks and on structure in the harbor.
     Offshore action remains good. The Dolphin bite remains stable with fish moving on in as close as 90 to 120-feet. There are also some nice Wahoo being caught currently with the occasional billfish showing up in the spread. Weather looks favorable for the upcoming weekend so get on em!
