Recipe of the Week

Shrimp Jambalaya

Directions:
Marsh Hens -
    Most important - skin them, don’t pluck them!
Cut them in half after skinning. We always did a breast half, and thigh- drumstick half.
     Parboil hens for several minutes in salted water with white vinegar in it, then drain. This takes out the blood and removes the fishy taste.
   S&P and flour them, then brown in oil or butter and remove.
     Sauté a lot of sweet onions and mushrooms (optional) then put birds back in skillet and cover with onions.
     Add some beef stock or beef broth, cover and cook for a while.
Remove birds and add flour and water to make gravy. Don’t forget to taste the gravy for seasoning
     We always served the birds over rice and covered it all in the good onion gravy. Done this way marsh hens are absolutely wonderful!

     Northeast winds 15 to 18 knots…99% of the time that means I will not be out on the water. There is that 1% of the time however; when I am keeping my fingers crossed for a good north east wind along with a full moon or new moon high tide, and some crisp fall weather. These conditions add up to the perfect scenario for Marsh Hens, Rails, Mud Chickens, what ever you prefer to call them.

South Atlantic Fishery Management Council to Hold Public Hearings on
Snapper Grouper Management Issues

     The South Atlantic Fishery Management Council will hold a series of 7 public hearings from November 2 through November 16, 2009 regarding three amendments to the Council’s Snapper Grouper Fishery Management Plan for the South Atlantic Region. With the exception of a hearing scheduled in Newport News, Virginia on November 16, 2009, all hearings will be held from 3:00 PM until 7:00 PM. The hearing scheduled for November 16th will begin at 6:00 PM.
     Council staff will provide presentations on the various amendments and management alternatives currently under consideration and will be available to answer questions. Area Council members will be on hand to accept public comment any time during the public hearing hours.
     The Council will accept written comments regarding the amendments from October 19, 2009 until 5:00 PM November 25, 2009. Instructions for submitting written comments, including email addresses, will be included in the Public Hearing Documents. Documents will be available on the Council’s Web site at www.safmc.net  by October 19, 2009 or by contacting the Council office at 843/571-4366 or Toll Free 866/SAFM-10.
     Amendments:
• Snapper Grouper Amendment 17A

Red snapper are currently undergoing overfishing and are overfished. Amendment 17A establishes Annual Catch Limits (ACLs) and Accountability Measures (AMs) for red snapper, long term management measures to rebuild the red snapper stock, and a monitoring program for red snapper. Management options include closure of the red snapper fishery plus alternatives for area closures for all snapper grouper fishing to address bycatch of red snapper, a permitted fishing zone, and various red snapper monitoring program alternatives.
• Snapper Grouper Amendment 17B
Establishment of ACLs and AMs for 9 remaining species in the snapper-grouper complex currently listed as undergoing overfishing. Alternatives include a proposed deepwater closure, allocations for golden tilefish, aggregate ACLs for gag, black grouper and red grouper, and AMs to close fisheries once the ACL is met.
• Snapper Grouper Amendment 18
Additional measures are being considered for the snapper-grouper complex, including expansion of the management unit northward, limiting access for the golden tilefish fishery, measures for the black sea bass pot fishery, change in fishing year for golden tilefish, improvements in fisheries statistics, and designation of Essential Fish Habitat (EFH) as necessary.

The Final Word

     This week has been a little crazy weather wise, but things are looking up for the weekend. Offshore water temperatures are in the low eighties so there are still plenty of Kings, some great Sailfish action, nice Dolphin and Wahoo action on the ledge..
     I fished some structure in the Folly at the end of last week and managed to pick up a few nice fat trout using a popping cork with a live shrimp underneath. I then fished in the surf on Saturday and picked up two Channel Bass on in the 35 pound range and the other just inside the slot limit. I managed to miss several other fish, most likely more Reds as the baits had tell tale scaled look upon retrieval. All surf action was on cut mullet, live finger mullet, and half of a blue crab. The fall mullet continues in full swing so bait is plentiful. We also have some good tailing tides currently and reds are being caught in the grass on DOA shrimp, jerk baits, and spoons. The Sheepshead are at the jetties and around other structure in the harbor. Enjoy some comfortable weather this weekend and a good college game on the radio and get on em’!
