Recipe of the Week

Shrimp Fettuccine Alfredo

Ingredients:
8 oz fettuccine, uncooked
1 Tbs. olive oil, divided
2 cloves garlic, minced
1 lb shrimp, uncooked, peeled and de-veined
6 mushrooms, sliced
2 tomatoes, diced
1 cup frozen peas, thawed
1 tsp. basil, dried
3/4 cup freshly grated Parmesan cheese
Directions:
Cook fettuccine in a large pot of boiling water until done. While pasta is cooking, heat 1/2 Tbsp oil in a large nonstick skillet and add garlic and shrimp. Cook shrimp, stirring constantly, just until they turn pink. Transfer shrimp to a bowl. Heat 1/2 Tbsp oil in skillet and add mushrooms, sautéing for 1 minute. Add tomatoes, peas and basil; cook for 1 minute. Stir in cooked shrimp and heat. Portion fettuccine onto plates and top with shrimp mixture. Sprinkle with Parmesan cheese and serve.

Christmas Dinner Lowcountry Style
     Each year we prepare the same items for Christmas Dinner. We start with the turkey, ham, sweet potatoes, stuffing etc. You get the picture. I was recently talking with a friend and he was saying they moved here to the coast and decided that seafood was so good and fresh that they were making their Christmas Dinner a seafood event complete with local oysters (which are in season), shrimp, and deviled crab along with some complimentary side dishes.

South Atlantic - Public Comment Sought on Commercial Wahoo/Dolphin Fishery Access
     NOAA Fisheries is seeking public comment on a proposal to control future access to the commercial dolphin/wahoo fishery operating in the exclusive economic zone of the South Atlantic. If changes to the management regime are developed and implemented under the Magnuson-Stevens Fishery Conservation and Management Act (Magnuson-Stevens Act), a control date could be used to limit the number of participants in the fishery. This announcement is intended, in part, to promote awareness of the potential eligibility criteria for future access so as to discourage speculative entry into the fishery while the South Atlantic Fishery Management Council and NOAA Fisheries consider whether and how access to the dolphin/wahoo commercial fishery should be controlled. Written comments must be received on or before 5 p.m., local time, January 4, 2008.
     The public may submit comments electronically via the Federal eRulemaking Portal www.regulations.gov , by Fax to (727) 824-5308 Attn: Kate Michie, or by mail to Michie, NOAA Fisheries Southeast Regional Office, Sustainable Fisheries Division, 263 13th Avenue South, St. Petersburg, FL 33701.

The Final Word

     The fishing early last week was really good before the strong cold front hit just in time for the weekend. Offshore there was a good blackfin tuna bite and of course the story of the week was the “Super Slam”, which consist of a blue marlin, white marlin, sailfish, and swordfish, that was accomplished by Steve Leasure and the crew of Summer Girl. Congratulations on a truly incredible day of fishing guys! The bottom fishing bite also remains strong with nice catches of red snapper, grouper, amberjack and black sea bass. Inshore the trout fishing is awesome. Fish are still hitting top-water plugs in the morning and are hitting a variety of colors in artificial baits as well. Live shrimp and mudminnows are also producing plenty of fish. Redfish are schooling on the flats and are hitting some top-water and a hot bait right now appears to be a white shad Gulp bait rigged with a flutter hook. The sheepshead are still inshore around the jetties and structures. Live fiddler crabs are the bait of choice. Hopefully the weather during the Christmas holidays will allow us to get out and enjoy the great fishing in the lowcountry.
