Best way to cook spanish?

I’m just getting in to catching what I cook and I was wondering what the best way to cook spanish mackerel? I’ve only tried pan fried with lemon. I would like to try grilling it, I just don’t know the best way to.

Fresh grilled with skin on or brined and smoked

I keep all my grilled fish simple, small amount of seasoning (cavenders/lowrys/old bay/sometimes nothing) and olive oil, grill hot with meat side down till it releases, flip to skin and give it another 2-3 mins at most for thin mack fillets

I will be trying the half-shell method soon too for heavier-scaled fish. wondering about a couple fat sheepshead fillets done jipride style now…

X2 on smoking. Short time in a brine. Let air dry in fridge for a few hours or overnight. Smoke and consume or make into a dip. Awesome stuff.

Im going to need to find a smoker then

If you don’t feel like the spending the money, use your grill if you have one. Use 1 or 2 burners on gas, or small amount of charcoal for indirect heat. You can make foil sleeves for smoking or pick up a smoke tube from A-MAZ-N. I use the tube when I cold smoke cheeses. Works awesome. amazenproducts.com

My suggestion other than smoking it is to only cook it fresh. If I can’t cook it fresh, I won’t keep it.

Egg wash dip, mix of flour & panko - fry in 375* lard. Tabasco, ground horseradish mixed with Hunts ketchup** But don’t do this often if you have artery disease.

Speaking of smoked fish dip…any chance for mackies on Wednesday?
