Wifey and I went out to get some store-bought food.
Reached out to grab some Blackening Seasoning and my wallet reached out and slapped me! GEEZ! $3.50 for a lil ol shaker?

Uh uh. no more.

Blackening Seasoning for Fish

1 -----------------
Paul Prudhomme's:
1 tbsp. sweet paprika
2 1/2 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. cayenne
3/4 tsp. freshly ground black pepper
3/4 tsp. freshly ground white pepper
1/2 tsp. dried thyme
1/2 tsp. dried oregano

2 ------------------
Tom's ???:
1 tablespoon paprika
4 teaspoons dried thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon white sugar
2 teaspoons salt
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper, or to taste
1 teaspoon dried oregano
1/2 teaspoon ground nutmeg
3/4 teaspoon ground cumin

Epicurious, Cajun and Blackening Seasoning, Pike Place Fish guys:
4 tablespoons paprika
3 tablespoons dried granulated onion
3 tablespoons dried granulated garlic
1/4 cup cayenne pepper
2 tablespoons white pepper
3 tablespoons finely ground black pepper
1 1/2 tablespoons ground thyme
1 1/2 tablespoons ground oregano
2 tablespoons ground New Mexican chile
1 tablespoon ground chipotle chile
