Saute'ed Cobia w/Shrimp

Ingredients:
1 lb Cobia, skin off, (cubed 1/2 - 3/4 inch)
Olive Oil
1/2 Cup Green Onions (cut into 1/2 inch pieces)
Salt & Pepper to taste
Juice of 1 or 2 Fresh Lemons
1/2 Cup Chopped Onions
4 Tbsp White Wine
8 Med/Large Shrimp or more
1 Garlic Clove (chopped)

Instructions:
Marinate Cobia cubes in Lemon juice for approx. 1-2 hrs. in refrigerator. Turn every 15 min.
On High Heat, cover saute’ pan with thin coat of Olive Oil.
Add ingredients, except Shrimp, and cook for approx. 4 min.
Add Shrimp and cook until Shrimp turns pink.
Total cook time, on High Heat, approx. 5 min.
Garnish w/lemon wedges or slices.
Serve w/cheese grits and a plate salad.
Pair with White Wine…Serves 2
